Pizza with BBQ Chicken Topping
When the pizza dough has risen, put it in the oven. Toppings for this pizza include BBQ sauce, grilled chicken, plenty of mozzarella, and red onion.
BBQ sauce: About a third of a cup of BBQ sauce is the sweet spot. Increase the amount of sauce if desired.
Chicken: The cooked chicken has to be chopped and there should be 1 cup worth. Pre-cooked chicken or rotisserie chicken can be available. You may shred it and use it on pizza. The chicken on the BBQ chicken pizza is optional.
One boneless, skinless chicken breast is enough. To prevent the grilled chicken from drying out, toss it with a little BBQ sauce just before sprinkling it on top of the pizza, using whichever way you like.
Cheese: For the best flavor, let’s combine TWO kinds of cheese. Shredded mozzarella gives it that classic pizza flavor, while smoked gouda gives it that rich, smoky flavor. Smoked gouda goes well with the tangy BBQ sauce and aromatic cilantro. If you’d rather not make a special trip, you may substitute mozzarella for the gouda.
Red onion: The red onion’s bite adds a lot of flavors. Is it true that you have a strong aversion to onions? Get rid of it.
Do you know “Which is the best cheese for pizza“?
It takes around 15 minutes to bake a pizza. When the edges are cooked, take them out of the oven and top them with chopped fresh cilantro. Every bite of the hot, cheesy pizza is improved by the addition of fresh cilantro. If cilantro isn’t your thing, that’s totally OK! You may omit it if you want.
Taste and texture-wise, this pizza is fantastic! Everything is covered by the smoky gouda, the soft crust, the crispy edges, the additional mozzarella, the sweet tang of the BBQ sauce, the juicy chicken, the zesty red onion, the fresh cilantro, and the soft crust.

My pizza dough recipe yields two 12-inch pizzas. The toppings given are for one 12-inch pizza. Save the remaining pizza dough for another time.
Ingredients of BBQ chicken pizza recipe:
- 1/2 homemade pizza crust recipe
- 1-2 tablespoons olive oil
- 1/3 cup plus 2 teaspoons of your preferred BBQ sauce
- 1 cup cooked chicken, chopped or shredded (about one 8-ounce breast)
- a third of a cup of shredded mozzarella cheese
- 2/3 cup smoked gouda cheese, shredded
- 1/2 tiny finely sliced red onion
- Optional garnish: fresh cilantro, chopped
Instructions to make BBQ chicken pizza:
- Preheat the oven to 475°F (246°C) and prepare the pizza dough to step 5. Cover the moulded dough gently with plastic wrap and set aside while the oven warms up.
- Brush the formed dough gently with olive oil to prevent the pizza toppings from making your pizza crust soggy. To avoid bubbling, make dents on the surface of the dough with your fingertips. Spread 1/3 cup BBQ sauce evenly over the dough. Toss the cooked chicken with the remaining BBQ sauce and distribute evenly on the pizza. Combine the cheese and red onion in a mixing bowl.

- Refrigerate leftover pizza by carefully wrapping it with plastic wrap. Reheat as desired. Baked pizza slices may be stored in the freezer for up to 3 months. For information on freezing the pizza dough, see the pizza crust recipe.
Notes:
1. If you do not use instant yeast, the rise time may be up to 40% longer.
2. If you don’t have smoked gouda, use the same quantity of shredded mozzarella instead. If preferred, leave off the onion and/or cilantro.
